Cool and Creamy Cucumbers
1 cup of plain greek yogurt
3 TBS white vinegar or rice wine vinegar
2 TBS sugar
Coarse ground pepper to taste
3 medium cucumbers peeled (if desired) and thinly sliced
1 small onion thinly sliced into rings
In a large bowl, whisk sour cream, sugar, vinegar, and pepper until blended. Add the cucumbers and onions, toss to coat. Refrigerate covered for 4-6 hours.
Stir well before serving, and garnish with more coarse ground pepper on top.
