Sheet Pan Pancakes

Pancakes have always been a crowd pleaser. Pulling out big breakfasts, especially on the weekends, is always fun. But during the holiday season, when you're trying to get out and get decorations up, holiday shopping done, or get the kids to the Christmas play practice, the last thing you want is the giant mess that pancakes make in the kitchen (at least for me they do.) This fun recipe requires no skillets, no pancake griddles, no spatulas, no flipping or burning. It's a one bowl, and one pan kind of recipe, and that's the way I like it, especially if I have a house full of overnight guests during the Holidays and I need to feed them, and have the kitchen cleaned quickly.


Enter the sheet pan pancake. Light and fluffy, with crispy edges, it checks all the pancake boxes for me, with almost no mess! It's the best pancake situation you'll find.

(makes 12)

3 cups of Pioneer Baking Mix

1/4 Cup Cornstarch

1/4 cup sugar

pinch of salt

1 3/4 cup of milk

3 eggs

2 tablespoons vegetable oil

1 teaspoon nutmeg

4 tablespoons of butter

Preheat your oven to 375. Using a large, rimmed cookie sheet, tear off a piece of parchment paper to cover. Crinkle up the parchment (this helps give you control over the paper) and then open back up and cover the sheet pan, making sure to use your fingers to form the paper down the sides of the pan, making the corners sharp, so the overhang of the paper is standing up, not flopping over.


Put the 4 tablespoons of butter on the parchment paper and place sheet pan in oven on the top rack to preheat and melt butter.


While butter is melting, in a large bowl, mix all the other ingredients together and whisk together until all is incorporated. Pour prepared batter over melted butter in sheet pan and return to oven and make for 20-25 minutes until set firm.

Slice into 12 portions and serve with your favorite syrup or topping!

There are plenty of ways to make variations on these pancakes and keep them interesting! Toss in a handful of chocolate chips, or chopped nuts, blueberries, raspberries, etc into the batter before baking. Sprinkle the top of finished pancakes with powdered sugar, or use honey instead of syrup. Customize them to make them special, and something your family will keep begging you for!
